Clearly, my farmers’ market addiction (we have many here and not just on the weekend!) coupled with my one winning tomato plant has given me cause to make yet another tomato pie! It’s the easiest thing in the world and great to make ahead of time, wrap, then bake off when you’re ready. Just remember to bake the pie shell 8-10 minutes before filling it!
Here is a good recipe. I fool around a tad with mine, but it’s much the same. Kids love it, adults love it, vegetarians love it – I serve mine with a side of cold asparagus with lemon aioli or a simple vinaigrette made in Mason jars. Enjoy the fruits of summer! Next up? Watermelon sangria! Yep, you heard that correctly!
